A flavorful herb crust makes these lamb chops extra special. Dijon mustard helps the breadcrumb crust adhere while adding a savory note. Get the full recipe and instructions for these herb-crusted lamb chops here.

This variation is self-seasoned
  1. 01Let chops come to room temperature. Pat dry. Season with salt and pepper.
  2. 02Mix the panko, herbs, olive oil, and garlic into a coarse, crumbly mixture.
  3. 03Brush the top (meat side, not bone side) of each chop with a thin layer of Dijon mustard. The mustard is the glue.
  4. 04Press the herb-panko mixture firmly onto the mustard-coated surface.
  5. 05Ready for the air fryer. Cook crust-side up. Don't flip or the crust falls off.
The Dijon mustard layer does two things: it glues the crust on and it adds a sharp, savory base note that complements the lamb. You won't taste "mustard." You'll taste a deeply herbaceous, golden crust with a complexity you can't quite place. Don't flip these. Cook them crust-side up the entire time and the radiant heat from above toasts the crust while the bottom sears against the basket.
