Sunchokes look like ginger root and taste like a nutty, slightly sweet artichoke crossed with a potato. They're not related to Jerusalem and they're not artichokes. The name is a historical misnomer. They grow underground like potatoes and crisp up beautifully in the air fryer. Find them at farmers markets or in the specialty produce section.
