Kale chips are a healthy and satisfying snack. Air frying kale with a little oil and salt yields crispy, crunchy chips in minutes. The page includes the full recipe plus a crucial tip for massaging the kale.

  • 1 bunch curly kale
  • 1 teaspoon oil
  • Salt
Pairs with Simple Salt & Pepper, Umami Bomb, Everything Bagel, or Ranch SeasoningSee all seasonings →
  1. 01Wash the kale and dry it THOROUGHLY. Use a salad spinner, then pat with towels. Any moisture left on the leaves steams instead of crisping.
  2. 02Strip the leaves from the thick center stems. Tear into 2 to 3 inch pieces. Discard the stems.
  3. 03Place the leaves in a bowl. Drizzle with oil and MASSAGE with your hands for 30 seconds. Squeeze and rub each leaf so the oil coats every surface.
  4. 04Season with salt.
  5. 05Ready for the air fryer. Don't crowd the basket. Cook in batches.
The massage step is real and not optional. Kale leaves have a waxy surface that repels oil. Massaging breaks down the surface and lets the oil adhere. Un-massaged kale dries out without crisping. Massaged kale turns into shatteringly crispy chips. 30 seconds of hand work changes the entire result.
