Cabbage steaks are surprisingly simple to cook in the air fryer, and the texture is exceptional. Season them simply with salt, pepper, and oil. Keeping the core intact is key for structural integrity.

  • 1 head green cabbage
  • Oil
  • Salt, pepper, and your seasoning of choice

  1. 01Remove any loose, damaged outer leaves.
  2. 02Cut the cabbage into 1-inch thick rounds from top to bottom, slicing through the core. The core holds each round together as a "steak."
  3. 03Brush both sides with oil and season generously.
  4. 04Ready for the air fryer.
Keep the core intact. The core is the structural backbone of the steak. If you remove it before cooking, the leaves separate and you have a pile of cabbage confetti, not a steak. The core softens during cooking and is edible in the finished product.
