Rutabaga needs a good peel before air frying. This recipe makes it easy, turning the dense root vegetable into tender cubes. Inside you'll find the full ingredient list, instructions, and air frying times.

  • 1 large rutabaga
  • 1 tablespoon oil
  • Salt and your seasoning of choice

  1. 01Peel the thick, waxy skin off the rutabaga. Use a sharp knife, not a vegetable peeler. The skin is too tough for most peelers.
  2. 02Cut into 1/2-inch cubes.
  3. 03Toss with oil and seasoning.
  4. 04Ready for the air fryer.
Rutabaga has a waxy coating on the outside that's applied to prevent dehydration during storage. That coating, plus the thick skin underneath, means you need to peel aggressively. Get all the way down to the pale yellow flesh. Once roasted, rutabaga tastes like a cross between a potato and a turnip, slightly sweet with earthy depth.
