Prepared eel fillets (unagi) cook beautifully in the air fryer. Brush with unagi sauce for a restaurant-quality glaze. You'll find the ingredient list, directions, and timing on this page.

  • 2 prepared eel fillets (unagi, pre-glazed or unglazed)
  • Unagi sauce / eel sauce (sweet soy glaze, store-bought is fine)
  • Parchment paper

  1. 01Place parchment paper in the air fryer basket.
  2. 02Lay the eel fillets skin-side down on the parchment.
  3. 03Brush the top generously with unagi sauce.
  4. 04Ready for the air fryer.
  5. 05Brush with another layer of sauce when it comes out.
Buy prepared unagi, not live eel. Prepared unagi fillets are already gutted, butterflied, and sometimes pre-glazed. You'll find them in the freezer section of Japanese or Asian grocery stores, usually vacuum-sealed. The double-glaze technique (before and after cooking) builds up the signature sticky, lacquered finish. Unagi sauce is available bottled in the Asian aisle of most grocery stores.
