Stuffed dates are an easy appetizer or dessert that needs no baking at all. The air fryer warms and softens them perfectly while toasting any bacon wrapping you add. The recipe below uses goat cheese and almonds, but it's easy to customize.

  1. 01Slit each date lengthwise along one side. Don't cut all the way through. Open it like a book and remove the pit if it's still in there.
  2. 02Fill each date with about 1 teaspoon of goat cheese. Press a nut into the cheese.
  3. 03If wrapping in bacon, wrap half a slice around each stuffed date and secure with a toothpick.
  4. 04If not wrapping, they're ready as-is.
  5. 05Ready for the air fryer.
  6. 06Drizzle with honey and sprinkle with flaky salt after cooking.
Medjool dates specifically. Not Deglet Noor, not generic "pitted dates" from the baking aisle. Medjool dates are larger, softer, and sweeter with a caramel-like flavor. The cheaper dates are dry and fibrous and don't work for stuffing. You'll find Medjools in the produce section, not the baking aisle.
