These cheese-stuffed burgers, also known as Juicy Lucys, need a 2-minute rest to prevent burning your mouth. The cheese inside is significantly hotter than the meat surface. See the recipe for the full technique.

Steps
01Divide the beef into 8 equal portions. Form each into a thin patty, about 1/4 inch thick and slightly wider than the bun.
02Place a slice of cheese (folded to fit) or a small mound of shredded cheese on 4 of the patties. Leave a 1/2-inch border of exposed meat around the edge.
03Top each cheese-loaded patty with one of the remaining plain patties. Press the edges together firmly to seal. Pinch all the way around. If the cheese leaks out during cooking, you didn't seal well enough.
04Press a dimple in the center of each stuffed patty.
05Season the outside generously with salt and pepper.
06Ready for the air fryer. These are thick and take longer than regular burgers.
07Let rest for 2 minutes before eating. The cheese inside is molten lava when it first comes out.
The 2-minute rest is a safety issue, not just a quality issue. The cheese inside is significantly hotter than the meat surface. People burn the roof of their mouth on the first bite of a Juicy Lucy every single time. Wait. The cheese is still melted after 2 minutes. It's just not actively trying to injure you.
