Preheat the air fryer to 350°F (175°C).
Lightly mist the pita bread with water or a tiny bit of olive oil spray.
Place 1-2 pitas in the air fryer basket.
Cook for 2-3 minutes until puffed up and warm to the touch.
Carefully remove from the basket.
Slice in half to open the pocket.
Stuff with falafel, chicken shawarma, or hummus with roasted vegetables immediately.
