This variation adds diced banana and cinnamon to the base pancake bite recipe. Dicing, instead of mashing, the banana keeps the batter light and creates distinct banana pockets. The full recipe and air frying instructions are on this page.

  • 1 cup pancake mix
  • Milk, egg, and oil per package directions
  • 1 small ripe banana, diced into 1/4-inch pieces
  • 1/2 teaspoon cinnamon
  • pinch nutmeg

  1. 01Prepare batter per package directions. Stir in cinnamon and nutmeg.
  2. 02Gently fold in diced banana.
  3. 03Pour into greased silicone mini muffin cups, 2/3 full.
  4. 04Ready for the air fryer.
  5. 05Drizzle with a little maple syrup and a sprinkle of cinnamon sugar.
Dice the banana, don't mash it. Mashed banana changes the batter consistency and makes the bites gummy. Diced pieces give you distinct banana pockets in a fluffy pancake bite.
