Softened butter is key. Cold butter tears the bread. Melted butter soaks in too fast and you get greasy bread with no butter on the surface to crisp. Room temperature butter spreads evenly and toasts into a golden crust. Set it out 30 minutes before you start, or microwave for 8 seconds.
