Popovers are light, airy, and impressive, and you can make them in your air fryer. The secret to success is a hot air fryer and a few simple tricks with the batter. Get our base recipe using eggs, milk, and flour, along with helpful tips and detailed instructions on this page.
Ingredients
2 large eggs
3/4 cup milk (whole or 2%)
3/4 cup all-purpose flour

Steps
01Blend the eggs, milk, flour, melted butter, and salt in a blender until completely smooth. No lumps. About 20 seconds.
02Let the batter rest for at least 15 minutes at room temperature. This lets the gluten relax and the air bubbles settle. Rested batter rises higher.
03Grease 4 ramekins very generously with butter. Not oil. Butter. The milk solids help the popover climb the sides.
04Pour batter into ramekins, filling about halfway.
05Ready for the air fryer.
06Do not open the air fryer during cooking. Popovers rise from steam. Opening the basket releases the steam and they collapse.
Popovers are basically Yorkshire puddings with a different name. The batter is dead simple but the technique matters. Room temp batter, very hot air fryer, don't open the basket. That's it. The eggs and steam do all the rising. There's no leavening agent in this recipe on purpose.
