  1. 01Mix the flour, yeast, salt, and sugar in a bowl.
  2. 02Add the warm water and 1 tablespoon of olive oil. Stir until a shaggy dough forms, then knead in the bowl for about 2 minutes until smooth. It should be soft and slightly sticky.
  3. 03Coat the dough with the remaining tablespoon of olive oil. Cover the bowl and let rise in a warm spot for 30 to 45 minutes until doubled in size.
  4. 04Drizzle olive oil into a 6-inch round pan (cake pan, pie tin, or parchment-lined basket). Transfer the dough. Press and stretch it to fill the pan.
  5. 05Use your fingertips to poke dimples all over the surface. Press deep. These dimples are what make it focaccia.
  6. 06Drizzle more olive oil into the dimples. Add flaky salt and any toppings.
  7. 07Let rest for 10 minutes while the air fryer preheats.
  8. 08Ready for the air fryer.
Don't be shy with the olive oil. Focaccia should feel almost fried on the bottom and slick on top. The dimples aren't decorative. They create pockets that catch oil and toppings and prevent the bread from puffing into a balloon instead of staying flat.
