  1. 01Cut each string cheese stick in half so you have 12 short pieces.
  2. 02Set up a breading station: flour in one shallow bowl, beaten eggs in a second, breadcrumbs mixed with garlic powder and salt in a third.
  3. 03Dredge each piece in flour, then egg, then breadcrumbs. Press the crumbs on firmly.
  4. 04Double-dip for a thicker coat: dip the breaded stick back into the egg, then into the breadcrumbs again.
  5. 05Place on a plate and freeze for at least 30 minutes. This is critical. Unfrozen mozzarella sticks blow out in the air fryer and you get an empty shell of breadcrumbs next to a puddle of cheese.
  6. 06Ready for the air fryer straight from the freezer.
The double-dip and the freeze are what separate homemade mozzarella sticks that actually work from the ones that explode. Don't skip either step.

Do not reheat. The cheese re-solidifies and won't re-melt properly. Eat fresh only.
