Making mini lemon tarts in the air fryer is surprisingly easy with the help of store-bought pie crust. The filling requires just a handful of ingredients including fresh lemon juice. Find the full recipe and air frying instructions on the page below.

For the filling:

  • 2 large egg yolks
  • 1/3 cup granulated sugar
  • 3 tablespoons fresh lemon juice (about 1 large lemon)
  • 1 teaspoon lemon zest
  • 2 tablespoons butter, melted
  • pinch salt

  1. 01Roll out the pie crust and cut 12 circles using a 3-inch round cutter. Press each circle into a mini muffin cup.
  2. 02Whisk together the egg yolks, sugar, lemon juice, zest, melted butter, and salt until smooth.
  3. 03Pour the filling into each shell, filling about 2/3 full. Don't overfill or they bubble over.
  4. 04Ready for the air fryer.
Use real lemon juice, not the bottled stuff. The difference in a recipe this simple is immediately obvious. One large lemon gives you about 3 tablespoons of juice and a teaspoon of zest, which is exactly what you need.
