These air-fried churro bites are made with choux pastry, the same dough as cream puffs. The boiling water technique creates a crispy outside and hollow inside. Check out the simple recipe, ingredients, and timing here.

For the dough:

  • 1/2 cup water
  • 2 tablespoons butter
  • 1 tablespoon granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup all-purpose flour
  • 1 large egg

  1. 01Bring the water, butter, sugar, and salt to a boil in a small saucepan.
  2. 02Remove from heat. Add all the flour at once and stir vigorously until the mixture forms a ball and pulls away from the sides of the pan. This happens fast, about 30 seconds.
  3. 03Let cool for 2 minutes, then add the egg and stir until the dough is smooth and glossy. It'll look like it's not coming together at first. Keep stirring. It will.
  4. 04Pinch off small pieces and roll into 1-inch balls or short logs about 2 inches long.
  5. 05Ready for the air fryer. Roll in cinnamon sugar as soon as they come out, while they're still hot.
This is choux pastry, the same dough used for cream puffs and eclairs. The technique of adding flour to boiling water is what gives churros their signature crispy outside and hollow inside. Don't skip the boiling step and try to mix it cold. It won't work.
